Japanese Cheesecake Recipe

Japanese Cheesecake is a beautiful cake from Sakura, Japan. This cake has a unique taste. For westerners, it might be a little strange because the ingredients used are authentic Japanese ingredients. It's just that you can modify this cake at home.


  • 5 oz. 140g fine granulated sugar
  • 6 egg whites
  • 6 egg yolks
  • 1/4 teaspoon cream of tartar
  • 2 oz. 50g unsalted butter
  • 9 oz. 250g cream cheese
  • 100 ml fresh milk
  • 1 tablespoon lemon juice
  • 2 oz 60g cake flour
  • 1 oz 20g corn starch
  • 1/4 teaspoon salt
